How to Choose
Select beets that are firm with smooth, blemish-free dark red or golden yellow skins. They should be heavy for their size and show no surface nicks or cuts.

How to Prepare

Rinse the beets and cut away all but an inch of the stalks. Small, young beets are tasty sliced or grated raw in salads. Note: Beet juice can stain, so protect your countertops. All types are delicious steamed, roasted or boiled.

How to Store
Refrigerate in a sealed plastic bag and they will stay fresh for two to three weeks, although the leaves will only last two to three days.
