How to Choose
Romaine heads should be compact, with firm leaves that show no signs of yellow or brown discoloration. Avoid heads that have cracked ribs or dark spots.

How to Prepare
Rinse the romaine under cold water, then use a salad spinner or pat the leaves dry to remove excessive moisture. Tear, chop or cut into bite size pieces for a salad, peal whole leaves from head for added crunch to a sandwich or cut into fours and throw on the grill (recipe).

How to Store
Place in a plastic bag and store in vegetable crisper. It will keep for five to seven days.
